Oats and Broken Wheat Idlis

This is a very healthy idli recipe. This recipe is instant so it does not need fermenting. This is best had with coconut chutney and is a breakfast dish.

Ingredients

  • 1/2 cup Oats

  • 1/2 cup Broken wheat (thin variety)

  • Salt, to taste

  • 1/2 cup Yogurt

  • A pinch of Eno salt or baking soda + lime juice

For tempering

  • 2 tbsp Ghee + oil (ratio of 1:1)

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 4 Finely chopped green chilies

  • 1 inch Grated ginger

  • 1 small Grated carrots

  • 2 tbsp Finely chopped coriander leaves

Instructions

  1. In a non stick pan dry roast oats for 3-4 minutes and powder it fine

  2. Dry roast broken wheat for 2 minutes, till it looks roasted, mix it with the oats and keep aside

  3. In a pan take ghee temper mustard seeds and urad dal till it becomes light brown

  4. Add green chillies, ginger, curry leaves and mix well

  5. Switch off the gas and add the grated carrot, mix this with the oats-wheat mixture

  6. Once completely cook, add yogurt, salt and water and mix well to make a thick batter (like idli batter)

  7. Just before making idlis, add eno salt and mix well

  8. Grease the idli moulds and make idlis like normal, steam for a little longer

Notes

  • Add eno just before steaming so if you are making a large batch, add for one batch at a time

  • You can add baking soda as a substitute to Eno salt
