Palada Payasam

This is a famous kheer made in Kerala traditionally for Onam Sadya. I love this creamy payasam and I would always buy this from restaurants on Onam. Since I love it so much, I decided to give this recipe a try. This is just a different version of our rice payasam except that you add rice adas instead of rice. You can get the adas at any store. When I tried this recipe for the first time it came out really well, except I did not get the pink colour I desired. Recently, I came across a YouTube video that showed the trick for this colour.

Cook Time: 1 hr 20 mins


Ingredients

  • 1/2 cup Readymade palada

  • 3/4 cup Sugar

  • 3 cups Full cream milk

Instructions

  1. Take milk in a pressure cooker and cook for 2-3 whistles in very low flame**

  2. In another vessel, take the ada and add boiling water, close and keep it aside for half hour

  3. Drain the water completely

  4. Once pressure is down, open the cooker, you will see that the milk is slightly pink in colour

  5. Add the ada and cook until the ada gets soft

  6. Add the sugar and mix for a min, switch off the flame

  7. Serve hot

Notes


** you can also add milk in a vessel, put a spoon, cover and keep this inside the cooker and cook for 2 whistles in sim flame

  • I do not add cardamom powder or any flavourings or nuts, I like it as is. The cooked milk smell tastes heavenly!

  • You can even caramelise sugar to get the pink colour. In a pan add 2 tbsps of sugar and stir continuously till it becomes dark golden (do not burn it, the flame has to be sim). Slowly add 1 tbsp water and keep stirring (be very careful as it may burn your hands) till you get a nice light brown caramel syrup. add this to the payasam for a nice pink colour
