Panchphoran is a bengali spice mix that is made up of 5 spices, and hence the name. This is a mix of nigella seeds, mustard seeds, fennel seeds, cumin seeds and fenugreek seeds in equal quantities.

Ingredients
1 cup Tur dal
1 tbsp Ghee
1 tsp Turmeric powder
Salt, to taste
1 tsp Chilli powder
1 tbsp Paanchphoran whole spice mix
1 tsp Amchur powder
Finely chopped coriander leaves, for garnish
Instructions
In a pressure cooker add the ghee
Splutter the panchphoran spice and saute till you get a nice aroma
Add the turmeric powder, chilli powder and amchur powder and saute for a minute
Add the tur dal, salt and water and cook for 2-3 whistles
Garnish with coriander leaves and serve hot with steamed rice and roasted potato
