Peas Stuffed Battis or Baafle

Battis are deep fried or baked cakes dipped in dal. They are a delicacy in Rajasthan. Baafles are a slight variation from Battis. They are first cooked in boiling water and then either deep fried or baked. I have made a further variation by filling the battis with green peas spicy mixture, then boiling it in water and baking it. These battis are tastier than normal battis due to the stuffing. I like spicy food so I made the filling with some added spice.

Cook Time: 1 hr 30 mins


Ingredients

For the outer covering

  • 2 cups Wheat flour

  • 1/2 cup Semolina

  • to taste Salt

  • 1/2 cup Besan

  • 1/3 cup Oil

For the green peas filling

  • 1 cup Boiled frozen green peas

  • to taste Salt

  • 2 tbsp Oil

  • 1 tsp Cumin seeds

  • 1 tsp Turmeric powder

  • 1 tsp Chilli powder

  • 1 tsp garam masala

  • 1 tsp Coriander powder

  • 2 tbsp Grated Green chillies

  • 1 tsp Fennel seeds roasted and ground

  • for garnish Finely chopped coriander leaves

  • as needed for brushing Butter

Instructions

For the Outer covering

  1. In a large mixing bowl add the flour, besan and semolina and whisk well

  2. Add the oil and mix in well. Make a fist of little dough (if you are able to form a fist, its ok else add some more oil).

  3. Add water little by little and knead into a soft smooth dough. Keep covered with a wet cloth for 20 mins.

For the filling

  1. In a pan take take oil and splutter cumin seeds

  2. Add turmeric powder, chilli powder, fennel seeds powder, garam masala, salt and mix well

  3. Add the boiled peas and crush it to make a coarse filling

  4. Garnish with coriander leaves

To proceed

  1. Make equal size of the balls (should be slightly bigger than lemon size balls)

  2. Roll into a small thick puri and toss in 2 tbsp of filling

  3. Cover, seal it well and flatten the balls slightly, making it like a kachori

  4. Add these in boiling water and let it boil till the balls start floating

  5. Remove them one by one carefully and keep them aside

  6. Line them in a greased baking tray

  7. Brush the top with butter

  8. Bake them in a 180 degrees C preheated oven for about 1 and 1/2 hours. Flip the sides in between and bake till the crust becomes brown

  9. Brush again with butter and serve it hot (you can have it as is from the oven)

Notes

You can even put the boiled peas in a chopper and do a coarse mixture
