I tasted this for the first time when this delicious sweet was served at my engagement ceremony about 31 years ago. At that time it was new and it was extremely tasty. This is just plain kesari or sheera with pineapple flavour and pineapple pieces. You can serve this as a dessert topped with pineapple ice cream.
Ingredients
1 cup Semolina
2 cups Sugar
2.5 cups Water
1 cup Finely chopped Pineapple slices
1 tsp Pineapple essence
4 tbsp Ghee
1 tbsp Broken cashew nuts
1 tbsp Raisins
A drop of yellow food colour
Instructions
Put the pineapple pieces in a chopper and chop them roughly
In a saucepan, take 1 tbsp ghee, roast cashew nuts and raisins and keep it aside
In the same pan, add another tbsp of ghee and roast rawa till light brown
In a saucepan, take water and add in the pineapple pieces and bring to a boil
Add boiled water to the semolina continuously stirring it and keep cooking till the water evaporates (you can close and cook for 2-3 minutes)
Add sugar and the food colour and cook while stirring continuously and making sure there are no lumps
Add the pineapple essence and keep adding ghee 1 tbsp at a time
Cook till the mixture starts to leave the pan
Switch off the flame and add the fried cashew nuts and raisins
Notes
Grind the pineapple pieces in the chopper very coarsely so that you get pieces in the halwa.
You can even finely cut the pineapple into pieces
If you are using pineapple in sugar syrup, reduce the quantity of sugar
