This is a very tasty cutlet, different from the regular potato cutlet. The main ingredient in a cutlet or a tikki is always potato but this one is loaded with a lot more healthy ingredients!

Ingredients
2 cups Poha or puffed rice
2 Boiled mashed potatoes
Salt, to taste
6 Finely chopped green chillies
1 tbsp Grated ginger
1/4 cup Finely chopped coriander leaves
1/2 cup Blanched spinach chopped
1/2 cup Grated carrots
1/2 cup Grated paneer
1/4 cup Roasted and coarsely powdered peanuts
1/4 cup Bread crumbs
1 Lemon juice
2 tsps Garam masala
Chaat masala, for garnish
1 tsp Amchur powder
Oil for shallow frying
Instructions
Soak the poha in 1 cup water for an hour. It will swell.
Squeeze the poha well till all the water is squeezed and add it to a large mixing bowl
Add all the other ingredients except oil and mix it mashing it well
Make oblong shaped cutlets and keep
In a non stick pan add oil and saute them for 15-20 mins on each side till it becomes crisp
Sprinkle chaat masala over hot cutlets
Serve hot with chutney of your choice or plain tomato ketchup
