Potato Podimas

This is a very easy and quick South Indian veggie and best eaten with sambhar rice. This is basically boiled and mashed potatoes with a few seasonings. This is a little bland and hence can be had with sambhar rice.


Cook Time: 30 mins


Ingredients

  • 3 Potatoes boiled

  • Salt, to taste

  • 1 tsp lemon juice

For tempering

  • 1 tbsp Oil

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 1/2 tbsp Ginger grated

  • 3 Slit green chillies

  • 4-5 Curry leaves

Instructions

  1. Mash the potatoes and keep aside

  2. In a pan, take oil, splutter mustard seeds, urad dal, green chillies and ginger

  3. When the dal become light pink, add the mashed potatoes

  4. Add salt, curry leaves and cook on low flame for 5-10 minutes

  5. Add lemon juice and turn off the gas

  6. Serve hot with sambhar rice
