Rajgira flour is made from the seeds of the amaranth plant. The rajgira grain flour is ideal for gluten free diets as well as for fasting where strictly non cereal foods are allowed. In India it is called Ramdana flour in Hindi and used extensively during religious festivals for fasting. I came to know of this flour only through my food group friends who are predominantly north indians and they sued to talk of different dishes with this flour.
