This is a different type of pongal that can be made as a prasad for some festivals or even on pongal day.

Ingredients
1/2 cup Semolina
1/4 cup Yellow moong dal
1 cup Jaggery
1/4 cup Coconut milk
1 and 1/2 cups Water for semolina
3/4 cup Water for dal
1 tsp Cardamom powder
2 tbsp Broken cashews and raisins
3 tbsp Ghee
Instructions
Pressure cook the moong dal in the cooker with 3/4 cup water till it becomes well cooked
In a pan take 1/2 tbsp ghee and roast cashew nuts and raisins and keep aside
In a saucepan add jaggery and just enough water to immerse and boil till it becomes little thick
Filter it to remove impurities and keep aside
In the same pan add 1/2 tbsp ghee and roast the semolina till it becomes light pink and you get a nice roasted aroma
Add 1 and 1/2 cup hot water and briskly stir it to avoid lumps. Cook till semolina is cooked.
Add the mashed dal to the semolina and mix well
Add the jaggery syrup and 1 tbsp ghee and mix well. Close and cook till the syrup gets absorbed.
Add the coconut milk, rest of the ghee and cardamom powder and mix well cooking for another 2-3 minutes
Add the cashew nuts and raisins and switch off the flame
Serve hot
