Rawa Sweet Pongal

This is a different type of pongal that can be made as a prasad for some festivals or even on pongal day.

Ingredients

  • 1/2 cup Semolina

  • 1/4 cup Yellow moong dal

  • 1 cup Jaggery

  • 1/4 cup Coconut milk

  • 1 and 1/2 cups Water for semolina

  • 3/4 cup Water for dal

  • 1 tsp Cardamom powder

  • 2 tbsp Broken cashews and raisins

  • 3 tbsp Ghee

Instructions

  1. Pressure cook the moong dal in the cooker with 3/4 cup water till it becomes well cooked

  2. In a pan take 1/2 tbsp ghee and roast cashew nuts and raisins and keep aside

  3. In a saucepan add jaggery and just enough water to immerse and boil till it becomes little thick

  4. Filter it to remove impurities and keep aside

  5. In the same pan add 1/2 tbsp ghee and roast the semolina till it becomes light pink and you get a nice roasted aroma

  6. Add 1 and 1/2 cup hot water and briskly stir it to avoid lumps. Cook till semolina is cooked.

  7. Add the mashed dal to the semolina and mix well

  8. Add the jaggery syrup and 1 tbsp ghee and mix well. Close and cook till the syrup gets absorbed.

  9. Add the coconut milk, rest of the ghee and cardamom powder and mix well cooking for another 2-3 minutes

  10. Add the cashew nuts and raisins and switch off the flame

  11. Serve hot
