Red Amaranth are very healthy leaves and a good source for iron. I wanted to find a recipe with these leaves, and tried the one below which turned out to be excellent. You would have probably noticed that most of my day to day cooking is very simple and I try to avoid too much spices or garam masala.

Ingredients
3/4 cup Chana dal
Salt, to taste
2 cups Finely chopped amaranth leaves
1 Finely chopped onions
1 Finely chopped tomatoes
1 tbsp Ginger garlic paste
1 tsp red chilli powder
1 tsp Garam masala
1 tsp Amchur powder
3 Finely chopped green chillies
For tempering
2 tbsp Ghee
4 Whole red chillies
1 tsp Cumin seeds
A pinch of Hing
1/2 tsp Fenugreek seeds
1 tsp Turmeric powder
Instructions
Soak chana dal for an hour in hot water
In a saucepan, take soaked chana dal, add salt and cook till just done. Do not mash it, just drain and keep aside.
In a pan take ghee and splutter cumin seeds
Add hing, red chillies, methi seeds and turmeric powder and saute for a minute
Add the onions, ginger garlic and saute till the raw smell goes away
Add the green chillies, tomatoes, salt, and saute till mushy
Add chilli powder, garam masala, amchur powder and mix well
Add the leaves and saute till leaves are cooked
Add the chana dal and cook till well combined
Serve hot with chapathis
