Firni is a North Indian dessert made of ground rice and milk. This has rose flavour and gulkhand added to it, making it a little different. You can make mango and strawberry in a similar manner.

Ingredients
1 and 1/2 cups milk
1 heaped tbsp Raw rice
3/4 cup Sugar
2 tbsp Cream (optional)
2 tbsp Gulkhand
Rose petals, for garnish
Instructions
Wash and soak the rice for an hour
Drain the water from the rice and grind the rice coarsely with some milk
In a thick saucepan start boiling milk
Add the ground rice and cook it
Add sugar and cook it further till it thickens
Add the cream and the gulkhand and mix well. Switch off the flame.
Pour this in individual serving bowls and garnish with rose petals and pistachios
Chill this in a refrigerator and serve cold
Notes
You can make mango, strawberry or plain phirni
In case of mango phirni, add thick mango puree after the phirni has cooled down, else it will curdle
For strawberry, you can add strawberry puree after the phirni has cooled down
