Semolina idlis are very tasty and tastier than the normal idlis since it has more spices. This idli is a bit different from the normal semolina idlis due to the vermicelli. This thinner variety of vermicelli should be used for easy steaming.

Ingredients
1/2 cup Semolina
1/2 cup Vermicelli (thin variety)
Salt, to taste
4 Finely chopped green chilies
1/2 tbsp Grated ginger
1 cup Yogurt
1/2 tsp Eno fruit salt
1/4 cup Finely chopped coriander leaves
For tempering
1 tbsp Oil
1 tbsp ghee
1 tsp mustard seeds
1 tsp Urad dal
Instructions
In a pan dry roast semolina till light brown and keep aside
Dry roast vermicelli till golden brown and keep aside
In the same pan take oil splutter mustard seeds and urad dal till it becomes light brown
Add the green chillies and ginger and sauté well
Add this to the vermicelli and rawa mixture and let it cool
Add salt and yogurt and mix well to form a thick batter. Keep aside for 20 minutes.
Mix well again and add more water if you think it is too thick
Just before making idlis, add eno salt and mix well
Make idlis in an idli cooker
Serve hot with chutney
