Set Dosa (Spongy Dosa)

Updated: Oct 5, 2021

Set dosa is generally a thick and soft dosa, contrast to the crisp thin ones. The addition of methi seeds and poha gives the sponginess to this dosa. This is not cooked on both sides like the normal dosa. This is served as a pair and hence called set dosa.

Prep Time: 14 hrs Cook Time: 15 mins

Ingredients

  • 2 cups Idli rice

  • 1/2 cup Urad dal

  • 1/3 tsp Methi seeds

  • Salt, to taste

  • 1 cup Poha

Instructions

  1. Soak the rice and the dal separately overnight

  2. Next morning soak poha in 1 cup water for half an hour

  3. Grind the dal and rice separately to a fine paste adding little water

  4. Drain the water from the poha and grind that to a fine paste adding very little or no water. Add the ground poha, salt and mix well

  5. Keep it closed in a warm place for fermenting for 8 hours, best is overnight

  6. Take a ladle of batter, add this to a hot tawa, do not spread much

  7. You will slowly see holes coming on top, drizzle oil in the sides and cover and cook only one side

  8. Serve hot with chutney
