Shakkarpare

I am sure most of you have heard about these lovely diamond cut beauties. These are made either thick or thin but I personally like it a little thicker. I have a wavy shape cutter to give it its shape. Theres a small trick that I did to get a layered shakkarpaare by rolling it after folding the dough


Prep Time: 30 mins Cook Time: 1 hr



Ingredients

  • 500 gms Maida

  • 100 gms ghee

  • 175 ml water

  • a pinch Salt

  • 175 gms sugar

  • Oil for frying

Instructions

  1. In a mixing bowl add the sugar and water and boil till sugar melts, cool and keep aside

  2. In a wide pan, take maida, ghee and salt and rub it well to incorporate the ghee into the flour well

  3. Add the sugar syrup and knead to make a soft firm dough, keep covered for half hour.

  4. Divide the roll into 2, keep one aside covered

  5. Roll the other part into a .25 cms rectangle

  6. Fold the 2 long sides one on top of the other, fold in the other 2 small sides and make it like a packet

  7. Roll this once more to a thick 0.5 cms rectangle

  8. Cut small squares or diamonds with a knife

  9. Deep fry these in medium hot oil till it gets well fried

  10. Do the same with the left over dough


Notes

  • Do not fry in high flame as they become brown soon but once cool they stay raw inside

  • If the dough is loose, you can add more maida

  • Folding the dough and rolling it gives a good layer in the paare
