South Indian Curd Rice

This is literally soul food! I can have a bowl of curd rice for lunch and would not need anything else after.

Ingredients

  • 1 cup Rice (preferably ambe mohar rice)

  • 3/4 cup Milk

  • 3 tbsp Curd (Yogurt)

  • Salt, to taste

  • 4 tbsp Grated carrots

  • 4 tbsp Finely chopped cucumber

  • Pomegranate, for garnish

For tempering

  • 2 tsps Oil

  • 1 tsp Mustard seeds

  • 3 Green chillies

  • 1 tsp Urad dal

  • 4-5 Curry leaves

  • 1 tsp Hing

Instructions

  1. Cook the rice till mashy, add salt and keep aside

  2. In a pan take oil and add all the ingredients for tempering

  3. Add the grated carrots and sauté for a minute, switch off the flame to cool

  4. Add the mashed rice, milk and cucumber and mix well

  5. Just before serving add the curd, adjust salt if needed and serve hot with pomegranate garnished
