Soya Chunks Biryani

I was very curious to know how to make this biryani firstly because soya is a good source of protein and secondly, a friend of mine told me if you want to replicate chicken in chicken biryani, use soya chunks. But since soya tastes bland and does not have any smell or taste, the biryani has to be made with strong smelling ingredients. I used a combination of 2-3 recipes and came out with this recipe which tastes wonderful. So lets proceed -




Prep Time: 30 mins

Cook Time: 1 hr


Ingredients

For marination

  • 1 cup Soya chunks

  • 1 cup curd

  • 2 tsp Chilli powder

  • 2 tsp Turmeric powder

  • 1 tsp Ginger Garlic paste

  • 1 tbsp Biryani masala

  • Salt to taste

Other ingredients

  • 1 & 1/2 cups Basmati rice

  • 1 big Finely chopped onions

  • 1 tbsp Ghee

  • 1 tsp Ginger garlic paste

  • Salt to taste

  • 2 tbsp Finely chopped coriander leaves

  • 2 tbsp Finely chopped mint leaves

  • 3 tbsp Fried onions

  • 1 tsp Biryani masala

  • 2 cups Water

For the whole spice

  • 2 tbsp Ghee

  • 1 Star anise

  • 1 Bay leaf

  • 1" Cinnamon

  • 3 Cloves

  • 3 pepper

  • 1 tsp cumin seeds


Instructions

For marination

1. Soak the soya chunks in hot boiling water for 15 mins, squeeze

2. In a mixing bowl, add all the ingredients under for marination and add the squeezed soya chunks and keep marinated for half hour


For Biryani

1. Wash and soak the basmati rice in water for 15 mins

2. In a pressure pan, add 2 tbsp ghee and add the whole spices. Saute for a minute

3. Add onions and ginger garlic paste and saute till light brown

4. Spread the marinated soya chunks over the onion mixture

5. Drain the rice and spread it over the soya chunks

6. Spread the fried onions, biryani masala, 1 tbsp ghee, coriander and mint leaves and add water

7. Cook in pressure pan for 1 whistle

8. Gently remove it in a serving bowl and serve hot with raita
