Sandesh is a delicacy of Bengalis. Most Bengali sweets are made of curdled milk (paneer). This recipe is along the same lines but with a twist of strawberry flavouring.

Ingredients
1 litre Fresh cream milk
1 tbsp Vinegar
2 tbsp Fresh cream
4 tbsp Sugar
1/4 cup Strawberry preserve or jam
1 tsp strawberry essence
Chopped pistachios, for garnish
2 drops red food colour
Instructions
Boil the milk in a heavy non stick pan
Add the vinegar, once the milk curdles switch off the gas and cover for 2-3 minutes
Strain this mixture, wash it under cold running water and tie in a muslin cloth with a tight knot to remove all the water for 1/2 hour
In a vessel, add this paneer and mash it well with your palm for almost 20 minutes till you can see the oil oozing out.
Add the sugar, cream, red food colour, strawberry reserve and mix well
In a non stick pan, add this mixture, and cook till the mixture leaves the sides and become a nice smooth dough (do not heat this in high flame)
Cool this, make small balls, make an impression in the centre and garnish with chopped pistachios
