Tomato and Capsicum Rice

This is a South Indian rice variety with the combination of capsicum and tomatoes. This is a very delicious recipe!


Prep Time: 10 mins Cook Time: 30 mins





Ingredients

  • 1 cup basmati rice

  • 3 Tomatoes

  • 1 Chopped capsicum

  • 1 Sliced onions

  • 1 tsp chilli powder

  • 1 tbsp Sambhar powder

  • Salt, to taste

  • 1 tsp Turmeric powder

  • 3 tbsp Oil

  • 1 tbsp Ghee

  • 2 Bay Leaves

  • 1 tsp Cumin seeds

Instructions

  1. In a pressure cooker take oil and ghee, add bay leaf

  2. Splutter cumin seeds, add turmeric powder

  3. Add onions and sauté till light brown

  4. Add capsicum, salt, chilli powder, sambhar powder and sauté well

  5. Puree tomatoes to a fine juice

  6. Add the tomato puree and water to make up for 1 and 3/4 glasses, cook for 1 whistle

  7. Once done fluff it with a fork to make sure the rice does not stick
