Valor, Muthiya Nu Shak

This is a Gujju subzi. Valor is a Gujrati name for flat beans. Muthiyas are basically small ball sized dumplings made of besan and wheat flour with spices and steamed. Methi Muthiyas are made using methi leaves and are extremely tasty as a snack. In this recipe, I have added oats flour instead of wheat flour. The combination of flat beans and Methi Muthiyas make a fantastic subzi.

Ingredients

  • 1/2 kg Flat broad beans

  • Salt, to taste

  • 1 tsp Turmeric powder

  • 3 tbsp Fresh grated coconut

  • 1 tsp Chilli powder

  • 1 tsp Sugar

  • 1 tsp Coriander powder

For the methi muthiyas

  • 1 cup Finely chopped methi

  • Salt, to taste

  • 1/4 cup Oats flour

  • 1/4 cup Besan

  • 1 tsp Chilli powder

  • 1 tbsp oil

  • 1 tsp Turmeric powder

  • A pinch of soda

  • 1 tbsp green chilli-ginger pastes

For tempering

  • 3 tbsp Oil

  • 1 tsp Mustard seeds

  • 1 tsp Cumin seeds

  • 1 tsp Ajwain

  • 1/2 tsp Hing

Instructions

For the muthiyas

  1. Add all the ingredients for the muthiya, a little water and make a tight dough

  2. Pinch and round small balls and steam them in an idli cooker for 20-25 minutes till they are done

  3. Cool and cut

To proceed

  1. Remove the ends of the string beans and cut it into two

  2. Microwave the beans till they are cooked, they should not be over cooked

  3. In a pan take oil and temper mustard seeds, cumin seeds, hing and ajwain

  4. Add the beans, chilli powder, coriander powder, sugar and salt and saute well

  5. Add the steamed muthiyas, adjust salt and cover and cook till well mixed

  6. Sprinkle ground coconut and saute for another minute

  7. Serve hot with rotis
