This is a South Indian chutney, best had with dosa, idlis or rice modaks.

Ingredients
2 Onions chopped
3 Tomatoes chopped
1 inch Ginger
5 Green chillies
1/4 cup Fresh grated coconut
1 cup Coriander leaves
Tamarind, small lemon sized
Salt, to taste
1/3 cup Carrots chopped
1/3 cup Cabbage chopped
5 Beans chopped
1/3 cup Pumpkin
1/3 cup Chayote chopped
1/3 cup Brinjal (optional)
For tempering
2 + 2 tbsp Sesame oil
1 tsp Mustard seeds
2 tsps Urad dal
5 Red chillies
1 tsp Hing
Instructions
Heat 1 tbsps oil and splutter mustard seed
Add urad dal, hing and red chillies and saute till dal becomes light brown, keep aside
In the same pan, take 3 tbsps oil, add onions, ginger and green chillies and saute till it becomes translucent
Add all the vegetables, salt and cook covered till the veggies are cooked well
Add the tomatoes and cook till it becomes soft
Add coriander leaves, grated coconut, tamarind and cook for another 10 minutes
Turn off the heat and let it cool
Grind this in a blender along with the tempered ingredients
Enjoy this chutney with steamed rice or with dosa and idlis or parathas
