Yam Kootu

This dish is another signature dish of my mom and I love this very much. This dish has a very nice combo of yam and pigeon eyed beans seasoned with coconut and spices. This can be had with rotis or with steamed rice and papad.





Prep Time: 1 hr 20 mins

Cook Time: 30 mins


Ingredients

  • 1 cup Yam cubed

  • 1/2 cup Pigeon eyes beans

  • Salt, to taste

  • 1 tsp Turmeric powder

Grind to a paste

  • 1/2 cup Fresh grated coconut

  • 1 tsp Cumin seeds

  • 4 Red chillies

  • 1 tsp Urad dal

For tempering

  • 1 tbsp Coconut oil

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 5-7 Curry leaves

Instructions

  1. Soak pigeon eyes beans for an hour and cook in a pressure cooker for 1 whistle

  2. Roast 1 tsp of urad dal till it becomes brown and grind it along with the other paste ingredients - grated coconut, cumin seeds and chillies.

  3. Cook the cubed yam in an open pan with salt and turmeric powder till cooked

  4. Add the cooked lobia beans and cook for a min only till the yam and the bean gets mixed well

  5. Add the paste and mix well, cook for 5 minutes

  6. Take a small pan, add coconut oil and splutter mustard seeds and urad dal

  7. Add curry leaves and temper the kootu

  8. Serve this hot with phulkas
